The Taste of Lisbon, Baked in Brookline.
Rich, flaky, and impossibly creamy — the way Lisbon intended.
The Pastel
Pastéis de nata were first created centuries ago by monks in the Jerónimos Monastery, who used leftover egg yolks to craft a custard so silky it became legend. What started as a humble recipe quickly turned into one of Portugal’s most beloved treats.
Today, that same flaky-crisp shell and caramelized custard still carry the taste of Lisbon’s history. At Flake, we honor the original technique while giving Boston a fresh, daily-baked version of Portugal’s sweetest icon.
Who we are
Cristina Quintino is a Lisbon native with lifelong pastel de nata standards — very high ones. After settling in Boston, she kept searching for the flavor she grew up with and never quite found it.
Enter her husband, Stephen Chen, who believed if Cristina couldn’t find the perfect pastel, they should just make it themselves. Many tests (and many crumbs) later, Flake was born — their way of sharing a little Lisbon magic with Brookline.
